Honey Chipotle Barbecue Sauce


I don't like store bought barbecue sauce.  It tastes like plastic to me.  In culinary school I learned how to make it from scratch, but I still had a hard time finding a sauce I liked.  My wonderful husband, bought me a little Weber charcoal grill, because I wanted to expand my cooking abilities to include grilling and barbecue.  I decided I needed a go-to sauce.  I searched and searched and found a recipe from The Pioneer Woman, that sounded good.  I made it, and I did like it, but I didn't love it.  I needed a sauce that I loved.  I made some changes, and turned it into my own.

Now, I also, dislike really chunky barbecue sauce.  But, homemade sauce is so great because it is unique and chunky and different from store bought.  For my own liking, I have this great tool, called PrepWorks Progressive Onion Chopper. I use it ALL THE TIME especially for this recipe.  It dices my onions into perfect tiny squares.  This way they all cook at the same rate, and it looks uniform.  Which for the OCD kids, is very helpful.  I also, sometimes cheat and use the store bought pre-minced garlic if I'm strapped for time.  Measuring and getting everything together before starting the cooking process is key in most recipes, but especially in this one.  Let's gather up our ingredients!
3 Tbsp. Canola Oil
6 cloves roasted Garlic, minced, separated
1 Large Sweet Onion, diced
3 c. Ketchup
1 c. Raw Honey
1 c. Dark Brown Sugar
1 7.5 oz can Chipotle Peppers in Adobo Sauce
ΒΌ c. Apple Cider Vinegar (or less to taste)
3 Tbsp. Worcestershire Sauce
Smoked Salt to taste

In a food processor, add Chipotle peppers, salt and 2 cloves of garlic, pulse until smooth.
Heat the oil in a saucepan over medium-low heat.
Add the garlic and onions and cook for 5 minutes, stirring, being careful not to burn them.
Reduce heat to low.
Add the ketchup, honey, brown sugar, chipotle peppers, vinegar (or less to taste), worcestershire sauce and salt.
Stir to combine.
Allow to simmer for 20 minutes.
Taste after simmering and add whatever ingredient it needs (more spice, sugar, etc.).
